The young, tender shoots are harvested in spring and early summer.

Russian Stonecrop / Orange Stonecrop (Sedum kamtschaticum)
1 Healthy plant in a 1litre pot packed in plastic-free packaging. Grown for its architectural, scalloped foliage, vivid starburst blooms, edible leaves and reliability in the UK garden.
Please note: this plant is semi-evergreen. During harsh UK winters, it naturally dies back to a tight crown of buds at soil level. This is normal. In spring, it will erupt with fresh, fleshy green rosettes that quickly form a lush, weed-suppressing mound.
Hardy perennial | Height 15-20cm | Full sun to light shade | Edible (Cooked) | Pollinator magnet.
Hailing from the rocky landscapes of Eastern Asia, this sedum is the perfect solution for those “difficult” spots in the garden, thriving in poor soil, baking sun, and coastal winds where more delicate perennials falter. Once established, it forms a dense mound of deep green, spoon-shaped leaves with serrated edges. By midsummer, the foliage is almost entirely hidden beneath a profusion of brilliant, star-like yellow flowers that age to a striking burnt-orange.
In the kitchen, the Russian Stonecrop is best treated as a succulent alternative to spinach or asparagus. While its cousin, Dol-namul /Gold moss stone crop, is a salad green, this variety is excellent when lightly cooked. The young, tender shoots are harvested in spring and early summer, typically blanched briefly in boiling water or added to stir-fries. Light cooking preserves the fleshy texture while removing any natural astringency found in the raw leaves, making it a nutritious side dish when dressed with sesame oil and garlic. (Note: We recommend eating this variety cooked rather than raw for the best flavour and digestibility.)
This is a high-yield, low-input plant that asks for nothing but gives back plenty. It functions as an excellent groundcover, suppressing weeds while providing a harvest. It looks just as good in a decorative pot as it does integrated into a polyculture system. If you want to maximise your garden’s diversity without increasing your workload or have a tricky hot spot that needs filling, this is the plant for you.
