This sorrel acts as a hardy, long-lived perennial filler that provides bright and lemony edible leaves that can be harvested as a cut-and-come-again salad leaf. The leaves are best eaten young and fresh, as they can become tough with age; however, the older leaves are good for lightly sautéing. While many garden greens succumb to the heat of midsummer or the first bite of frost, this sorrel is remarkably resilient, often providing a “hungry gap” harvest when other salad crops have failed.
Beyond its culinary utility, the plant serves a vital ecological function by producing upright flower spikes that, if left to go to seed, provide a high-energy food source for wild birds and shelter for beneficial ground beetles.
