Bronze Fennel is a statuesque herb with finely divided, smoky-bronze foliage that forms soft, upright mounds before sending up tall, elegant flower stalks topped with yellow umbels in midsummer. Its colour and texture make it a striking choice for ornamental planting schemes, while its long season of interest from spring foliage to autumn seed heads ensures year-round appeal.

Every part of the plant is edible, with a sweet, aniseed-like flavour that works beautifully in both sweet and savoury dishes. Use the fronds fresh in salads, sauces, or fish dishes; harvest the seeds for baking or spice blends; or dig the root in late autumn for a fennel-flavoured vegetable.
