Patience Dock is a robust, leafy perennial long valued for its mild, spinach-like leaves that appear early in spring and can be harvested well into autumn. With broad, deep green foliage and a generous habit, it provides one of the earliest and most reliable harvests of any leafy green—perfect for soups, stews, and sautés.
Unlike common dock, its flavour is mild with minimal bitterness, especially when harvested young, and it holds its texture well when cooked. It can be cut repeatedly through the season, returning quickly with lush new growth, or let it flower for beautiful structure in the garden!
In a permaculture garden, Patience Dock earns its keep as a soil-enriching, nutrient-accumulating plant with deep taproots that mine minerals from below. It also offers excellent ground cover, helping suppress weeds and retain moisture. Easy to grow, generous in yield, and practically bulletproof—this is a must-have leafy green!
